Pierogi with Cheese and Potatoes

Pierogi are a perfect comfort food, the only problem is that there is never enough :) Easy way to make pierogi with cheese and potato. You can have them directly from the pot or fry them later. That is one dish that never gets boring.

Pierogi


Ingredients

  • Mashed Potatoes
  • Farmers Cheese 
  • 1 Onion 
  • 3 Cups All Purpose Flour 
  • 250 mL Hot Water 
  • Cooking Oil
  • Salt to taste 
  • Pepper to taste 

Preparation

  1. Finely Chop your onions and add then to a frying pan with a bit of oil , You want them to caramelize for 10-15 minutes 
  2. For your Dough : Add 3 Cups Flour and make a hole in the middle , Add in  ½ Tsp Salt and 4 Tsp Cooking Oil .
  3. Mix the dough together with your hands and then you can add in 250 mL and continue to mix until it forms a dough :) 
  4. Once the dough doesn't stick to your hands it is ready and you can shape it into a ball and place plastic wrap over it and let it sit for about 15 minutes.
  5. Once the onions are done you can mix them in with your mashed potatoes and add in your farmers cheese by crumbling it up . 
  6. Add in your salt and pepper to your taste, being sure to combine well with your filling :) 
  7. Once your dough is done resting , You can cut it in half to work in smaller portions and roll it out until it is ⅛ of an inch thick. Then taking a round cookie cutter (monika used a 3 ½ inch cutter) cut out circles .
  8. Grab some filling and place in the middle of your dough , put a bit of water on one half/edge of the pierogi, stretch it out a little to close and finish with the twist. 
  9. Now you can boil your pierogi , Be sure  your water is salted! You can put in 5-6 pierogi at a time and once they float to the top they are ready :) 
  10. Add your toppings and enjoy ! (monika added fried bacon bits and onions) 

Tips

When mixing your dough together and you feel it is still too dry you can add more hot water little by little till you get your consistency just right  :) Once you've cut out your pierogi you can stack them. To prevent them from sticking you can place a little bit of flour in between them  :)
