How to make it
“Ryba po Grecku” is a traditional Polish dish that combines fish and carrots into a delicious meal. The name which translates to “Fish Greek Style” was most likely inspired by ingredients that are often used in Mediterranean cuisine. Often it is a part of Christmas Eve supper, but it makes a very tasty and healthy meal year round.
Wash and peel carrots, next grate them on the coarse side of your grater. Make sure to use a sizable bowl to accommodate 2 lbs of grated carrots. The traditional cobalt patterns are perfect to bring the photogenic and enticing look of carrots to life. While carrots are showing off in the beautiful bowl, you can finely dice onions and caramelize them with a little bit of oil. Add carrots, spices, a cup of water and simmer on a low heat. While the carrots are cooking, prepare your fish to fry. Spice the filets with a little bit of salt and pepper, coat them in flour on both sides and fry on oil for 3-4 minutes (each side) on a medium heat.
Find a baker or serving dish that is deep enough to accommodate multiple layers. Polish Pottery bakers in traditional patterns would be perfect as they will contrast very well with the rich orange color of carrots. Spread a layer of carrots on the bottom, approximately half an inch thick. Then a layer of fried fish and again a layer of carrots.
The Fish is ready to serve, but if you leave it for a day or two in a fridge the taste and aroma will significantly enhance making it even more rich and delightful. “Ryba po Grecku” is one of my favorite holiday recipes and it is one of those dishes that is gone fast.
