Polish Peach Cake

Sweet and soft, perfect cake for afternoon tea :)

Peach Cake

Cook Time : 50 Minutes 

Ingredients

  • 2 Big Peaches 
  • 2 Eggs 
  • ½ Cup of Sugar 
  • 1 Stick Unsalted Butter 
  • 2 TBS of Cooking Oil 
  • ¼ Tsp Baking Soda 
  • ½ Tsp Baking Powder 
  • 1 Cup Flour 
  • 1 TSP Vanilla Extract 
  • Mixing Bowl 
  • Small Mixing Bowl 
  • Baking pan 10’’  X 7’’
  • Baking spray 

Tips

You can always substitute any fruit of your choosing :) For softened butter , you can set it out a couple hours before use or a day before :) To check if your cake is done  you can stick it with a skewer, if it comes out clean it is ready , if it comes out sticky you can leave it in for 5-10 minutes more :) 

Preparation

  1. Add 2 Eggs and ½ Cup of Sugar to your mixing bowl and beat on high for 2-3 minutes until your eggs are fluffy and light in color.
  2. Add in 1 Stick of Unsalted Butter softened to your bowl and beat for another 2 minutes.
  3. Add in 2 TBSP Cooking Oil and beat 
  4. In a smaller mixing bowl add in ¼ TSP Baking Soda and ½ TSP Baking Powder and mix.
  5. In the same mixing bowl , Add in 1 Cup of Flour and mix.
  6. Now you can pour your dry ingredients into your egg mixture and beat until fully combined. 
  7. Add 1 TSP of Vanilla Extract and beat for 2 minutes on low.
  8. Grab your baking pan and spray it with non-stick cooking oil with flour making  sure to coat it entirely and pour in your cake batter.
  9. Now you can cut your peaches into wedges , making sure to remove any excess pit , then cut them in half. 
  10. Finally you can add in your peaches , placing them facing up and down making sure to push them down slightly in the batter.
  11. Bake your peach cake in the oven for 45-50 minutes at 350 degrees.
