Stuffed Crepes

Krokiety are mushroom stuffed crepes that are breaded and fried.

Ready in 15 minutes

Makes about  8-10 Rolled Crepes

Ingredients

  • 1 Large White Onion
  • Cooking Oil of Choice
  • 16 oz or about 10-12 Baby Portobello Mushrooms
  • Salt and Pepper
  • Breadcrumbs
  •  4-5 eggs 
  • About 12 crepes (Nalesniki) 

Preparation of Filling

  1. Begin by dicing 1 large white onion
  2. Add 1 tbsp of cooking oil of choice to your frying pan on medium heat, in this recipe I am using Olive Oil but you can use any cooking oil you like.
  3. Add your diced onion to the frying pan and begin cooking for about 5-6 minutes.
  4. While the onions are cooking, begin grating the baby portobello mushrooms. In this recipe I am using the coarse side of the grater for larger pieces of mushroom, you can also chop the mushrooms if you prefer.
  5. Once the mushrooms are grated, begin adding them to the pan with the onion. The mushrooms will start to shrink down as they are cooked, so start by adding a little at a time. The mushrooms also create their own juices and you want to try to cook those juices out as much as you can. 
  6. Add salt and pepper to taste, and cook the mushroom and onion mix together until mushrooms are cooked down and there is not much juice in the pan. 
  7. Transfer the mushroom and onion mix to a large mixing bowl to begin mixing the filling for the Krokiety
  8. Begin by adding ⅓ of a cup of breadcrumbs to your mushroom and onion mixture and mix.  The breadcrumbs are used to absorb any leftover juices created by the onion and mushroom mixture, so feel free to add a little more if necessary. 
  9. Adjust salt and pepper to taste

Preparation of Crepe Rolls

  1. Begin by taking your already made crepes ( Nalesniki) and laying one out on a flat surface. 
  2. Take a large spoonful of the filling and add to the top/middle of the crepe. Keep in mind you do not want to go edge to edge with the filling, just apply it at the top half of the crepe, leaving room to roll. 
  3. Fold the sides of the crepe over the filling and press down slightly to bind. Roll the crepe filling side first and set aside. Repeat with remaining ingredients. 
  4. In separate dishes add about 2 cups of breadcrumbs and about 4-5 eggs (beaten). We are now going to bread the rolled crepes to prepare them for frying. 
  5. Place some cooking oil at the bottom of your frying pan on medium heat. 
  6. Take each roll and coat in the egg and then the breadcrumbs and place in the pan of hot oil. ( repeat for all rolls) 
  7. Fry the rolls until golden brown and then flip. Once the rolls are golden brown on both sides, you are done!
