Polish Plum Cake

Sweet and sour delicious cake made with fresh plums.

Plum Cake


Ready in 30-45 minutes

Ingredients/What you need

  • 1 Whole Stick softened butter (unsalted)
  • 2-3 Plums 
  • ⅓  Cup of Regular Granulated Sugar 
  • 2 Eggs 
  • ¾ Cup All Purpose Flour 
  • ½ Teaspoon Baking Powder 
  • Additional ½ Cup of Regular Granulated Sugar and ½ Cup fFlour for the crumbles 
  • 1 Large mixing bowl 
  • 1 Smaller mixing bowl 

Preparation

  1. Grab your large bowl and add in ½ stick of softened butter. 
  2. Add in ⅓ Cup of Sugar and mix until well combined.
  3. Add in your 2 Eggs and mix until well combined for 2 minutes. 
  4. Add in ¾ Cup of All purpose Flour 
  5. Add in ½ Teaspoon of Baking powder and mix until well combined
  6. Next you can grab your baker (Monika used the 10x7 rectangular baker) and grease it with a bit of butter and Scoop all the batter into the baker 
  7. Then grab your 2 plums and cut in half where the natural groove is and twist it like a jar and it will come apart.
  8. Cut each plum half into about 5 slices (the thinner the slices the better , but not paper thin)
  9. Now you can place the plums into the batter , One facing up and one facing down until there is no more room /until you run out.
  10. Now you can preheat your oven to 350 degrees while we make the crumbles for the top of the plum cake :) 
  11. Add in ½ stick of softened butter to the smaller bowl 
  12. Add in ½ Cup of Flour
  13. Add in ½ Cup sugar and mix with a fork as best you can for a minute or two.
  14.  Then you can mix a bit more with your hands , squeezing the butter with sugar together. Now you can use your hands to pinch and sprinkle the crumble all over the plumcake, be sure not to smush it down . The crumbles should be loosey goosey. 
  15. Once your oven is done preheating you can put your plumcake in for 40-45 minutes , once 40 minutes hits you can use a skewer or a long knife to check if it is ready. 

Tips

Once 40 minutes hits you can use a skewer or a long knife to check if it is ready. If the cake is still gooey you can add another 5 minutes or so until it is done. You can also use any type of fruit you'd like but plums are best.
